📖 The Story Behind This Dish

Bunny chow comes from the Indian community of Durban on the east coast: a whole (or half) loaf of bread is hollowed out and filled with mutton, chicken, or bean curry. It's served with the scooped-out bread on top like a lid, and eaten by tearing off bread to dip in the curry. Despite the name it has nothing to do with rabbits, and there are many theories about its origin.

🌆 Where it's eaten: At a seaside eatery in Durban, red curry arrives in a whole loaf, and people scoop it up with torn pieces of bread.

🥕 Ingredients (serves 4)

👩‍🍳 Instructions

  1. Heat oil in a pot and sauté the cinnamon stick, curry leaves, and chopped onion.

  2. Add the grated ginger and garlic, curry powder, and chili powder until fragrant.

  3. Add the bite-size lamb and fry, then add the chopped tomatoes, 400ml water, and salt and simmer 40 minutes.

  4. Add the diced potatoes, simmer 20 minutes, and add the garam masala.

  5. Cut the loaf in half and hollow out the inside to make a bowl (keep the scooped-out bread).

  6. Fill with curry, top with the bread lid, and scatter with cilantro.
