📖 The Story Behind This Dish

Bake and shark is the specialty of Maracas Beach on Trinidad's north coast: spice-marinated fried shark fillet is tucked into puffy fried bread (bake). At the stalls you can add as much pineapple, cabbage, tomato, garlic sauce, tamarind sauce, and shadon beni herb sauce as you like. At home it's usually made with white fish.

🌆 Where it's eaten: In front of a stall at Maracas Beach, swimmers take fried fish sandwiches and add one sauce after another from the long lineup.

🥕 Ingredients (serves 4)

👩‍🍳 Instructions

  1. Rub the fish with lime juice, grated garlic, thyme, and salt and let stand 30 minutes.

  2. Knead the flour, baking powder, sugar, and salt with water, rest 30 minutes, divide into 4, and flatten to palm size.

  3. Fry the dough in 180°C oil until puffed.

  4. Dust the fish with flour and fry until crisp.

  5. Slit the bread, tuck in the fish, and top with cabbage, tomato, pineapple, and a sauce of chopped cilantro mixed with mayonnaise.
