Mishkak are Omani skewers of beef or lamb marinated in tamarind and spices and grilled over charcoal. On Muscat's waterfront and on Eid festival nights, stalls line up and fragrant smoke fills the air. They're eaten with a sweet, sour, spicy sauce and flatbread.
Cut the beef into 2cm cubes.
Mix the grated garlic, ginger, tamarind paste, spices, lemon juice, oil, and salt and marinate the beef at least 2 hours.
Thread the meat onto bamboo skewers.
Grill or pan-fry over high heat for 6–8 minutes, turning occasionally.
Boil down the leftover marinade into a sauce and serve alongside.
