📖 The Story Behind This Dish

Pyonsu are square dumplings famous in Kaesong: a filling of pork, beef, tofu, bean sprouts, and mushrooms is wrapped in thin squares and boiled or steamed. They're sometimes floated in cold broth in summer, and in Kaesong they're also loved as a New Year dish.

🌆 Where it's eaten: In a Kaesong kitchen, square dumplings line a board, are boiled in a pot, and served in bowls.
