📖 The Story Behind This Dish

Samlor korko means 'stirred soup' and is one of Cambodia's national home dishes. Meat is fried with herb paste, then plenty of seasonal vegetables such as pumpkin, green papaya, eggplant, and green beans are added and simmered. Adding ground toasted rice gives it a light thickness and a nutty aroma.

🌆 Where it's eaten: Under the eaves of a stilt house in a farming village, the family gathers around a big pot of vegetable soup and spoons it over rice.

🥕 Ingredients (serves 4)

👩‍🍳 Instructions

  1. Dry-toast the raw rice in a frying pan until colored and grind into powder in a mortar.

  2. Pound the lemongrass, galangal, turmeric, and makrut lime leaves into a paste.

  3. Heat oil in a pot, fry the paste, and add the sliced pork and stir-fry.

  4. Add 1L water and the shrimp paste, then the pumpkin, green papaya, and eggplant and simmer 15 minutes.

  5. Add the green beans and stir in the toasted rice powder a little at a time to thicken.

  6. Season with fish sauce and sugar and finish when the vegetables are tender.
