📖 The Story Behind This Dish

Qatayef is an essential sweet during Ramadan in Egypt and across the Arab world. Small pancakes cooked on one side only are folded into half-moons around a filling of walnuts, raisins, and coconut, then fried and dipped in a lemon-scented sugar syrup. On Ramadan nights, pastry shops turn out round after round of batter at their storefronts.

🌆 Where it's eaten: On a Ramadan evening in Cairo, rounds of batter are poured one after another onto a griddle at a pastry shop's storefront, and after the sunset meal families nibble on syrup-soaked qatayef.

🥕 Ingredients (serves 4)

👩‍🍳 Instructions

  1. Mix the flour, semolina, dry yeast, baking powder, and sugar, add the milk and 100ml water to make a smooth batter, and rest 30 minutes.

  2. Boil the granulated sugar and 100ml water (for syrup) for 5 minutes, add the lemon juice and rose water to make a syrup, and let cool.

  3. Mix the chopped walnuts, raisins, desiccated coconut, and cinnamon to make the filling.

  4. Pour batter into a hot frying pan in rounds about 8cm across and cook on one side only until the top is dry and covered in small holes.

  5. With the cooked side out, add filling, fold into a half-moon, and press the edges firmly to seal.

  6. Fry in 170°C oil until golden and dip into the cold syrup while hot.
