Montreal bagels were brought by Eastern European Jewish immigrants in the early 20th century. Compared with New York bagels they're smaller with a bigger hole, made with egg and no salt in the dough. They're boiled in honey-sweetened water and baked in wood-fired ovens, so they come out sweet and toasty. Sesame is the favorite.
Mix the bread flour, yeast, egg, 2 tbsp honey, oil, and lukewarm water, and knead for 10 minutes.
Cover and let rise somewhere warm for 1 hour, until doubled.
Divide into 8, roll each into a 25cm rope, and overlap the ends to form a ring.
Bring the water with 3 tbsp honey to a boil and boil the bagels 1 minute per side.
Drain and coat all over with sesame seeds.
Bake in an oven preheated to its highest setting for 15–18 minutes until well browned.
